Recipe: Mediterranean Salad with Hot Honey Dressing (with feta and sundried tomatoes)

MEDITERRANEAN SALAD WITH HOT HONEY DRESSING

FOR THE DRESSING:
6 tablespoons garlic wine vinegar
6 tablespoons olive oil
2 tablespoons balsamic vinegar
1 red chilli pepper, finely chopped
2 tablespoons clear honey
FOR THE SALAD:
1 head lettuce, washed and shredded
4 ounces feta cheese, crumbled
2 ounces sun-dried tomatoes, sliced

Place the dressing ingredients in a screw topped jar and shake well to mix together.

Place the salad ingredients into a serving bowl and pour over the dressing just before serving.

Makes 4-6 servings (as an accompaniment)
