Recipe: Mexican Chicken Casserole

Chicken Sopa (Mexican Chicken Casserole)

One dozen corn tortillas
3-4 chicken breasts, cooked and cubed
1 can cream of chicken soup
1 ancho chile, roasted, seeded, and chopped OR 1 can (4 ounces) chopped green chiles
1 cup sour cream or plain yogurt
1/2 cup chopped onion
2 cups shredded cheddar cheese

Line the bottom of a medium casserole dish with tortillas that have been torn into small strips. Save at least half of the tortillas for later. In a mixing bowl, combine chicken, soup, chiles, onion and sour cream. Spread 1/2 of the chicken mixture on top of the first layer of tortillas. Sprinkle with 1 cup shredded cheddar cheese.
Repeat layers in order. Cover and cook for 45 minutes at 350 degrees F, then uncover and bake 15 minutes more.
