Recipe: Mexican Pita Pizzas
Pizza/FocacciaMEXICAN PITA PIZZAS
4 pita breads
1 (15 oz) can black beans, drained
(11.5 oz) pico de gallo, drained
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
TO SERVE:
2 cups shredded lettuce
salsa
guacamole
sliced scallions
sliced ripe olives
Preheat oven to 375 degrees F.
Place pita breads on large baking sheet.
In medium bowl, combine beans and Pico de Gallo. Spoon over pita breads. Sprinkle each with cheeses.
Bake 14 to 18 minutes or until heated through and cheese is melted.
TO SERVE:
Top with shredded lettuce. Cut each into 6 wedges. Serve with salsa, sour cream, guacamole, scallions and/or olives.
