Recipe: Yummy Crustless Cheesecake (using cream cheese and farmer's cheese)

YUMMY CRUSTLESS CHEESECAKE

2 packages (8 ounces each) cream cheese
1 pound farmer cheese
2 cups sugar
4 eggs
1/2 cup all-purpose flour
Juice of 1 lemon
1 teaspoon vanilla extract
1/2 cup sweet (unsalted) butter, softened (plus more for buttering pan)
1 pint dairy sour cream

Preheat oven to 325 degrees F. Butter a 9-inch springform pan.

Put all ingredients in large bowl of electric mixer and beat at medium speed 20 minutes, or until light and creamy.

Bake in slow oven (325 degrees F) 1 hour. Then turn off oven temperature control and let cake stand in oven 2 hours.

Serve at room temperature or chill, if preferred. Refrigerate leftovers.

Makes 12 servings
