BANANA BREAD
3 or 4 ripe bananas, mashed (1 pound)
1 tablespoon granulated sugar substitute
2 eggs, well beaten
1 3/4 cups cake flour
3 teaspoons baking powder
1/4 teaspoon salt
1/4 cup chopped walnuts
Preheat oven to 350 degrees F. Grease a loaf pan (approximately 4 by 7-inches).
Sprinkle sugar substitute over bananas and stir until dissolved; blend in eggs. Set aside.
Sift together flour, baking powder and salt; add walnuts; blend thoroughly into banana mixture, but do not overmix.
Pour batter into prepared loaf pan.
Bake 25 minutes, then reduce heat to 300 degrees F and continue baking for 35 to 40 minutes until done.
