Recipe: Native Foods Restaurant Speedy Kim Chee

SPEEDY KIM CHEE

1 medium Napa cabbage
6 cups warm water
2 teaspoons sea salt
2 green onions, sliced into 1 1/2-inch lengths
5 garlic cloves, minced
1 small red chile, sliced into 1/8-inch rounds
1 tablespoon grated fresh ginger
1 1/2 tablespoons toasted sesame oil
1 tablespoon maple syrup
1 teaspoon sea salt
1/2 teaspoon cayenne powder

Quarter cabbage lengthwise, leaving base intact. Fill a large bowl with warm water and sea salt, and soak sections of cabbage until soft, about 5-10 minutes. Drain and rinse with fresh water, cut off base, and set aside.

In a medium-size bowl, mix together rest of ingredients.

Tear drained cabbage leaves lengthwise into narrow strips, and toss with pepper mixture in bowl. Wait 5 minutes, then serve.
