Recipe: Microwave Peanut Brittle

Here is the recipe my husband uses. He must make a ton of this at christmas for gifts!!
MUNCHING PEANUT BRITTLE
1 Cup Sugar............................ In 1 1/2-qt. Casserole stir together
cup white corn syrup Sugar and syrup. Microwave at high
4 minutes.
1 Cup roasted, salted .............. Stir in peanuts. Microwave at high
Peanuts 3-5 minutes, until light brown.
1 tsp. Butter..............................Add butter and vanilla to syrup, blend
1 tsp. Vanilla extract well. Microwave at high 1-2 minutes
More. Peanuts will be lightly browned
And syrup very hot.
1 tsp. Baking soda....................Add baking soda and gently stir until
Light and foamy.(Be sure to stir easy
To prevent lumps)
Pour mixture onto lightly greased cookie sheet, or unbuttered non-stick coated
Cookie sheet. Let cool to 1 hour. When cool, break into pieces and store in air- tight container.
