BAKED PORK CHOP WITH SQUASH
1 (6 ounce) pork loin rib chop, cut 1/2-inch thick
1 teaspoon milk
dash of salt and pepper
1 tablespoon fine dry bread crumbs
1 tablespoon finely chopped almonds
2 teaspoons margarine or butter, melted, divided use
dash of paprika
1 small yellow summer squash, halved lengthwise and cut into 1/4-inch slices
1 teaspoon brown sugar
1/4 teaspoon dried thyme crushed
1/4 teaspoon finely shredded lemon peel
Preheat oven to 375 degrees F.
Trim excess fat from chop. Brush chop with milk. Sprinkle lightly with salt and pepper.
In a small bowl combine bread crumbs, almonds, 1 teaspoon of the melted margarine or butter, and paprika.
Place chops in a shallow baking dish. Top with almond mixture.
Bake, covered in a 375 degree F oven for 30 minutes.
Uncover and bake for 10-15 minutes more or until tender.
Meanwhile, place squash in an 8-10 ounce baking dish. Top with brown sugar, thyme and lemon peel. Drizzle with remaining melted margarine. Place in the 375 degree oven with the chop.
Bake, covered, for 10 minutes.
Stir well; cover and bake for 5-10 minutes or till tender.
