Hi- I made up this lower fat version of minced chicken and eggplant, as we are getting two eggplants a day from our garden. It is very close to PF Chang's chicken and eggplant, but a lot less calories. My kids and the neighbor kids, who "don't like eggplant" ate it and asked for seconds.
The photo is not my dish-it was the closest photo on Google images. The eggplant will be softer and the sauce thicker than the photo. Next time I'll take a photo.
