PEA and CORN SALAD...I find its better to make a large large bowl full as its hard to stop eating it once you've made it...and trust me...little bowls do not last long...not even for a single person...LOL...The pea salad it fabulous ...
YOU WILL NEED:
2 heads iceberg lettuce washed and torn into bite sized pieces and layered in a large deep bowl with lid...Although if you wanted to use fancier lettuce...I'm sure it would work just fine...or pre-packaged lettuce washed really well...about 2 or 3 bags...
1/2 to 3/4 cup red onion finely diced or cut into circles...your choice...I dice...
1 small bag Green Giant frozen corn...thawed...
1 small bag Green Giant frozen peas...thawed...
1 big jar Helman's Mayonaise or your preferred brand...You could also use light mayo if you want or miracle whip if thats your taste...
1 package bacon cut into pieces and fried to crisp...For qicker working pre-packaged real bacon pieces will work...
FRY THE BACON AND COOL...
As I said wash the lettuce and tear it into bite sized pieces...and layer it in your large bowl...
Sprinkle in the diced red onion or if you choses circles layer them around the top of the lettuce...per your satisfaction...as much or as little as you like...
Pour on your thawed peas and corn for the next 2 layers...pressing them down slightly and evenly
Spread about 2 cups mayo across the top like you are icing a cake...
Then sprinkle with cooled crispy bacon...cover and refrigerate...until ready to serve....This salad is a picnic favorite...Bowls are always empty...MMMMMMM!!!
