BLUEBERRY-APPLE CRISP
6 apples, thinly sliced
2 cups blueberries
2 tbsp. lemon juice
2 cups rolled oats, uncooked
3/4 cup whole wheat flour
1/2 cup raisins
2 tsp. ground cinnamon
1/2 cup apple juice
1/3 cup honey
2 tbsp. canola oil
Coat a 9x13-inch baking dish with no-stick spray. Add the apples, blueberries and lemon juice. Toss to combine.
In a large bowl, combine the oats, flour, raisins and cinnamon. Drizzle with the apple juice, honey and oil. Combine well. Sprinkle over the fruit.
Bake at 350 degrees F for 30 to 40 minutes, or until the apples are tender.
Makes 12 to 15 servings
