Recipe: Mock Crab Cakes (made with zucchini)

Hello, Here's a recipe from our archives.

ZUCCHINI CRAB CAKES

2 cups grated zucchini (squeeze out the juice)
2 eggs, well beaten
2 cups bread crumbs
1 tablespoon mayonnaise
1 tablespoon Old Bay seasoning
1 small onion, grated

Mix all ingredients well and make into cakes.

Flour on both sides and fry in hot oil until brown.
