Recipe(tried): More on Mojo

My husband is Cuban and we have been married for 28 years and I have learned to cook all the favorite Cuban dishes and also Spanish (his mother). It's very easy to make your own Mojo and use it on pork or chicken. You can also buy Mojo in latino markets or in the ethnic section of your supermarket in many areas of the country. I would think that in your area it would not be a problem. I have used the brand Goya when I was rushed for time and it is very good. When making Lechon (fresh bone in pork)and I am rushed for times I will put the pork in a large baking pan and pour the whole bottle of Mojo over the pork and roast/bake for the time accounted for (basting along the way). Your home will smell wonderful!! To make your own mojo is very easy as follows: Sour oranges (in season) or half lemon half orange juice, fresh crushed garlic, and oregano. Add these ingredients to a jar (I make alot of this)and shake well and refrigerate (shaking the jar several times during the day). Then pour over your meat as needed and marinate. The marinade can be stored in the refrigerator for only a few days.
