MORRISON'S CAFETERIA'S BUTTERED COCONUT PIE
2 (9-inch) deep dish pie crusts
4 1/2 cups sugar
1 1/2 sticks margarine (3/4 cup / 12 tablespoons)
1/4 teaspoon salt
1 cup all-purpose flour
7 eggs, plus 1 egg yolk
2 cups water
1 1/4 teaspoons vanilla extract
2 1/4 cups shredded coconut
Partially bake pie shells (follow baking directions on package)
In a mixing bowl, using an electric mixer, cream the margarine and sugar together. Add the salt and flour and beat well.
In a separate bowl, whisk the eggs until combined. Add 2 cups water and whisk again. Add this mixture slowly to the flour mixture, beating as you pour. When well combined, add the vanilla and coconut and beat until combined.
Pour mixture into partially baked pie shells.
Bake in preheated 350 degree F oven for 20 to 30 minutes, or until done.
