APPLE PIE WITH HONEY
pastry for a two-crust 9-inch pie
3/4 cup honey
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 Tablespoon flour
grated rind of 1 lemon
6 to 8 tart juicy apples, peeled cored and sliced
1/2 cup sour cream
Preheat oven to 400 degrees F. Line a 9-inch pie pan with bottom crust. Reserve pastry for top crust.
In mixing bowl, toss together honey, sour cream, salt, spices, flour and lemon rind.
Using 2 forks, toss the apples in the sugar mixture. Arrange the mixture in a mound over the pastry shell. Cover with the top crust, crimping the edges together. Make several slashes on the top crust with a sharp knife.
Bake the pie at 400 degrees F for 40 minutes, or until the crust is golden brown.
