Recipe(tried): Mussels Marinara

This is easy

1. Chop fine two med size onions and heat up 3 of 4 tbls good olive oil and fry onions until transparent.
2. Take 4 of 5 cloves garlic the bigger the better (split the garlic cloves and remove the center shoot, this is bitter) sqeeze the garlic through a garlic press and add to the onions. Fry for a while but don't let the garlic burn. Add a glass of dry white wine (remember if it not good enough to drink then don't use it in cooking) add pepper to taste fresh ground!
3. Add 2 of 3 tsp Italian Seasonings. Add two tins of skinless italian plum course chopped tomatoes and simmer 10 to 15 minutes
4. While all this is simmering clean the mussels ( remove the beards by pulling gently away from the shell)
5. Bring the marinara sauce to a boil and dump the mussels into the boiling cauldrin and cover.
6. Steam for about 3 of 4 minutes or until the shells open
7. Serve with plenty of Italian bread and butter to mop up the sauce.
Finally enjoy

If you want Chilly Mussels add chopped chillies at 3. to taste
I didn't add salt because the mussels retain a lot of salt water which is released during steaming.
