Recipe: Nanaimo Bars VII

Nanaimo bars

Bottom layer:
1/2 cup unsalted butter
1/4 cup sugar
4 tablespoons cocoa
1 egg, beaten
2 cups graham cracker crumbs
1 cup coconut

Melt butter, sugar, cocoa in double boiler.
Add egg and stir until cooked and thickened.
Remove from heat.
Stir in crumbs and coconut.
Press into 8x8 pan.

Middle layer:
1/4 cup unsalted butter
3 tablespoons cream
2 tablespoons vanilla custard powder
2 cups icing sugar

Cream ingredients together.
Beat until light.
Spread over bottom layer.

Top layer:
4 oz semi-sweet chocolate
1 tsp butter

Melt over low heat.
Spread over top of bars.
Cool in refrigerator.
