SQUASH-DRESSING CASSEROLE
2 pounds zucchini or yellow squash, sliced
1 medium onion, chopped
boiling water
1/2 pint sour cream (1 cup)
1 (10 3/4 oz) can condensed cream of chicken soup, undiluted
1 stick (1/2 cup) margarine, melted
1 small package Pepperidge Farm herb flavored stuffing (use dry)
Preheat oven to 400 degrees F.
Cook squash and onion in boiling water until barely done. Drain and place in a large bowl.
Stir in sour cream and soup; set aside.
Combine melted margarine and stuffing. Line a casserole dish with a little more than half of the stuffing mixture. Place the squash mixture next. Top with remaining stuffing.
Bake at 400 degrees for 20 to 25 minutes, until bubbly.
