Recipe(tried): Nancy's Red Velvet Cake with White Velvet Icing (Mock Whipped Cream)

CREAM TOGETHER:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
SIFT TOGETHER:
2 cups flour
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
ADD DRY MIXTURE TO CREAMED MIXTURE
ALTERNATELY WITH:
1 cup buttermilk
THEN ADD:
1 teaspoon vanilla
2 ounces red food coloring
Beat well.
FOLD IN:
1 teaspoon baking soda, dissolved in 1 tablespoon vinegar (careful, it foams)
Place batter in two greased and floured 9-inch layer pans or a greased and floured 7x11-inch sheet cake pan.
Bake for 30 to 35 minutes at 350 degrees F. Cool and cover with White Velvet Icing.
WHITE VELVET ICING
(MOCK WHIPPED CREAM)
5 tablespoons flour
1 cup whole milk
1/2 cup Crisco shortening
1/2 cup oleo (stick margarine)
1 cup white sugar
1 teaspoon vanilla extract
Boil flour and milk together, stirring until thickened, cool.
Beat shortening, margarine, sugar and vanilla together until fluffy
Combine the two mixtures together, beat until thick, fluffy and creamy smooth (Don't skimp on the beating).
