Recipe(tried): Collin St Bakery Fruit Cake tips - made it!

Desserts - Cakes
Thanks Betsy. I made the fruitcake and it really doesn't need oil or butter. I guess the eggs plus the oil from the pecans make the trick. The fruitcake was delicious, really close to the one from the bakery. A few tips for next time:
- press the dough in the pan really hard for it to become more compact
- I'll either cover the the pan during baking or put a whole layer of pecans at the top; the top got too brittle
- I put a bit, perhaps 1/3 cup of citron peel and I thought it added a good kick.
- I'm thinking of a way to add some honey, I may reduce the sugar a bit and add a few spoons of honey.
I really loved it. Thank you for the original post and all comments.
Ana.
