Recipe(tried): New Years Dinner: Meatloaf, Black-Eyed Peas

Happy New Year!Hope everyone is doing well & enjoying the season.With this meatloaf we had garlic smashed potatoes & brown gravy,buttered spinach,black-eyed peas,Kraft mac-n-cheese & skillet candied yams (I had extra from Christmas that needed to be cooked,this recipe I have posted before). Back to watching our weight tomorrow!I hope 2002 is the best year for all!

Meatloaf:

2 lbs.ground chuck
2 large eggs,slightly beaten
3/4 c.quick cook oatmeal
1 envelope Lipton beefy onion soup mix
1/2 c. onion,finely chopped
1/2 tsp.dry mustard
1 Tbls.worchestershire sauce
1/4 c.water
1/3 c. ketchup
1 celery stalk,chopped fine
1/4 tsp.each of salt & pepper

Sauce:3/4 c.ketchup,2 tsp.prepared mustard & 1 Tbls brown sugar.

Mix all together & form into a loaf.Spread sauce over top & bake 45 minutes covered,uncover & bake 30 minutes longer at 350 degrees.

Black-Eyed Peas:

1 & 1/4 c.dried black eyed peas
4 c.water
1 onion,chopped
8 pieces bacon,fried crisp & crumbled
pinch of red pepper

Put all ingredients in a pot & cook slowly till tender--about 3 hours.
Even better the next day!!
