Oatmeal Shortbreads

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 cups sifted flour
2/3 cup brown sugar -- firmly packed
2/3 cup quick-cooking oats
1 cup butter

Combine all ingredients in large mixing bowl. With pastry blender or fingers, cut or rub ingredients together until well blended and crumbly. Press firmly and evenly into greased 15.5- by 10.5- by 1-inch jelly roll pan. (lightly flour fingertips if necessary to prevent sticking.) Bake in a slow oven (300 deg. F.) for 40-45 minutes, or until deep goden. Whilse still hot, cut into 2- by 1.5-inch bars. Cool in pan on rack. Makes about 4 dozen.

Not terribly sweet, nutty tasting.

No Bake Honey Oat Bars

Fruit Oatmeal

Amount Measure Ingredient -- Preparation Method

1/4 cup sugar
1/4 cup margarine or butter
1/3 cup honey
1/2 teaspoon ground cinnamon
1 cup dried fruit bits
1 1/2 cups whole wheat flake cereal
1 cup quick-cooking oats
1/2 cup sliced almonds

Butter a square 9- x 9- x 2-inch pan. Heat sugar, margarine honey and cinnamon in a 3-quart saucepan over medium heat, stirring constantly until boiling. Boil 1 minute., stirring constantly; remove from heat. Stir in fruit bits. Stir in remaining ingredients. Press mixture in pan with back of wooden spoon. Cool completely. Makes 24 bars.

Cream Filled Oat Bars

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 can (14oz.) sweetened condensed milk
2 teaspoons grated lemon peel
1/4 cup lemon juice
1 1/4 cups all-purpose flour
1 cup quick-cooking oats or old fashioned oats
1/2 cup brown sugar -- firmly packed
1/2 cup margarine or butter -- softened
1/4 teaspoon salt
1/4 teaspoon baking soda

Heat oven to 375-deg. F. Grease square pan, 9- x 9- x 2-inches. mix milk, lemon peel and lemon juice until thickened; reserve. Mix remaining ingredients until crumbly.

Press half of the crumbly mixture in pan. Bake about 10 minutes or until set. Spread milk mixture ove baked layer. Sprinkle remaining crumbly mixture on milk mixture. Press gently into milk mixture. Bake about 20 minutes or until ege is golden brown and center is set but soft. Cool completely. Makes 24 bars.
