OATMEAL CAKE WITH BROILED BROWN SUGAR TOPPING
1 1/4 cups boiling water
1 cup oats, uncooked
1/2 cup (1 stick) butter, softened
1 cup packed brown sugar
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
FOR THE BROWN SUGAR-COCONUT TOPPING:
3/4 cup packed brown sugar
1 cup flaked coconut
1 cup chopped nuts
1 egg
3 tablespoons butter
3 tablespoons milk
Preheat oven to 350 degrees. Butter a 9x13-inch cake pan. Set aside.
Pour boiling water over oats. Let stand for 10 minutes.
Cream butter, brown sugar, sugar, vanilla and eggs. Add oats, flour, baking soda, nutmeg and cinnamon. Beat well. Pour batter into prepared pan.
Bake for 45 to 50 minutes or until cake tests done.
TO PREPARE THE TOPPING:
Place brown sugar, coconut, nuts, egg, butter and milk in medium bowl. Using fingers, mix until crumbly. Sprinkle over cake.
Broil for 5 minutes or until bubbly.
Makes 1 (9x13-inch) cake.
