Kathy,.MA (10:06:59) : SPANISH BAR CAKE

4 cups water
2 cups raisins
1 cup shortening
4 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon salt
2 eggs
1 cup chopped nuts

Preheat oven to 350 degrees F. Lightly grease one 13x9 inch cake pan.
Cook raisins and water for 10 minutes over medium heat. Stir in the shortening. Remove from heat and let mixture cool. Combine flour, salt, baking soda, ground cloves, ground nutmeg, ground cinnamon, ground allspice, and salt. Add flour mixture to the cooled raisin mixture and blend well. Stir in the beaten eggs. Add the chopped nuts (if desired). Pour batter into prepared pan. Bake at 350 degrees F for 35 minutes. Makes 1 -9x13 inch cake. Like the A&P cake.

Gladys,.PR (03:25:37) : There is a sauce which we use to accompany fish, but might also be used with all kind of appetizers (fried ones, like fish sticks, etc.) It is called MOJITO:

1 cup tomato juice
4 sliced onions
Salt and Pepper
2 laurel leaves
1 paprika teaspoon
1/2 tsp ground cumin
2 tsp. olive oil
1 chicken cube
2 garlic cloves crushed in a mortar
1/2 cup white wine

Use a heavy, medium size pot. You add the olive oil, onions, garlic, wine and chicken cube and you saut until the union is wilted. Then you add all the other ingredients and boil the mojito in medium-low heat for about 45 minutes.

Should be served over fish, shrimps, chicken breasts or POLENTA.

Sofrito: (A Puerto Rican Condiment for Beans, Sauce, Stews and Yellow Rice).

2 Green Peppers
1 Medium Onion
Cilantro or Cilantrillo
3 to 6 Garlic cloves
a dash of salt and pepper if desired
1 TBSP of Olive Oil
1 (handful) of "Ajices dulces" literally "sweet peppers" these are very small peppers and they are multi-colored. You might find them in a spanish bodega or this item can be omitted if you don't find it.

Chop all the ingredients and blend in food processor or blender. Use 1 to 2 teaspoons to add flavor to your sauce.
