Recipe: Dried Beef Chowder
SoupsDRIED BEEF CHOWDER
1/2 cup finely chopped onion
1/2 cup butter or margarine
1/2 cup flour
4 cups milk
1 chicken flavor bouillon cube
3 medium potatoes, peeled, diced, boiled 10 minutes, or until soft*
1 (4 1/2 oz.) pkg. Armour Star Sliced Dried Beef, rinsed, chopped
Dash Worcestershire sauce
Cook onion in butter or margarine until tender.
Stir in flour. Slowly add milk and bouillon, stirring until thickened.
Add potatoes, dried beef and Worcestershire sauce; heat, covered over low heat 10 minutes.
*You may substitute 1 (16 oz.) can of whole potatoes (drained and diced) for the 3 medium potatoes.
VARIATION:
Add 1 (16 oz.) can corn, drained with the dried beef and potatoes
MICROWAVE INSTRUCTIONS:
In a 2 quart microwave-safe bowl, combine onion and butter or margarine; microwave on high for 1 minute. Blend in flour. Gradually add milk stirring until sauce is smooth. Add bouillon cube, microwave on high 11-15 minutes or until thickened, stirring every 2 minutes, Add potatoes, dried beef and Worcestershire sauce; microwave on high 4-6 minutes or until heated.
Makes 6 cups
