Recipe: Julia Child's Fresh Strawberry Sherbet with Fresh Strawberries (food processor)

WITH FRESH STRAWBERRIES
2 1/2 quarts fresh, ripe strawberries, divided use
2 1/4 cups sugar, divided use
5 tablespoons freshly squeezed lemon juice, divided use
1 teaspoon red wine vinegar
Stem 1 1/2 quarts strawberries, drop them into a large bowl of cold water, swish gently and drain immediately. Puree them in a food processor with 2 cups sugar and 3 tablespoons lemon juice, continuing until the sugar has dissolved completely. Taste analytically to be sure.
Stir over a bowl of ice cubes and water to chill thoroughly; freeze in ice cream maker according to your machine directions.
AN HOUR OR SO BEFORE SERVING:
Wash and stem the remaining strawberries and drain thoroughly on a rack. Quarter or half them lengthwise. Toss gently in a bowl with the remaining 2 tablespoons lemon juice, wine vinegar and 1/4 cup sugar or to taste. Cover and chill.
TO SERVE:
Spoon the sliced strawberries around each portion of sherbet.
Makes 8 servings
