Old World New York Cheesecake
Crust:
2 cups graham crackers
4 tbsp. sugar
1/4 tsp. cinnamon
melted butter to moisten
Filling
1 1/2 cups sugar
2 Tbsp. flour
4 pkg (8 oz each) cream cheese, softened
5 eggs
1/2 cup heavy cream
1 tsp. vanilla
Preheat oven to 350F.
Crush graham crackers to fine powder, mix in sugar and cinnamon, use melted butter to moisten crumbs. Form crust in 10-inch spingform pan.
Bake crust in 350 oven for 5 minutes, set on rack to cool. Turn oven to 400.
In large bowl combine sugar and flour. Using an electric mixer on low speed, mix in one package of the cream cheese and one of the eggs until well combined. Alternate additions of remaining eggs and packages or cream cheese. Stir in heavy cream and vanilla. Pour into prepared crust.
Bake in oven at 400 for 10 minutes; turn down oven to 225F and bake for 1hr 20 minutes, turn off oven leave in another hour, take out of oven. Cool to room temperature. Separate from pan, and refrigerate.
