Recipe: Onion and Tomato Salad with Tequila Dressing

ONION AND TOMATO SALAD

"This is a great salad to make ahead while you grill meat or fish for dinner. It's also a nice salad to take to a potluck dinner."

FOR THE DRESSING:
2 cloves garlic, run through a garlic press
3 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon chopped dill weed
1 tablespoon chopped fresh parsley
1 teaspoon Dijon mustard
2 tablespoons tequila
1/2 teaspoon salt
1/2 teaspoon ground black pepper
FOR THE SALAD:
2 red onions, thinly sliced
4 or 5 tomatoes, cut into wedges

Mix garlic, oil, vinegar, dill, parsley, mustard, tequila, salt, and pepper together in the bottom of a wooden salad bowl.

Stir in onion and tomato and let stand at room temperature for 1/2 hour before serving.

Stir again and serve.

Makes 4 servings
