Recipe: Sausage Stuffed Cornish Hens (serves 2)

SAUSAGE STUFFED CORNISH HENS

1/2 pound bulk pork sausage
1/4 pound mushrooms, sliced
2 cups Stove Top Stuffing Mix for chicken
1/4 cup grated carrot
1 cup hot water
2 Cornish Game Hens (1 to 1 1/2 lbs each)*
2 tablespoons apple jelly

Brown sausage with mushrooms in skillet; drain. Mix in stuffing mix, carrot and hot water.

Rinse hens with cold water; pat dry. Spoon stuffing into cavities.* Close openings with skewers. Place birds, breast-side up, in shallow roasting pan. Brush with oil.

Roast in oven at 350 degrees for 1 hour. Spoon jelly over hens. Bake an additional 10 minutes.

*Place any remaining stuffing in baking dish; cover. Bake with hens during last 20 minutes of baking time.

*Great Substitute: Substitute 1 roasting chicken (4 to 5 pounds) for Cornish hens; roast 1 1/2 hours before topping with jelly. Continue as directed.
