Here's a good quick recipe for the garden.
MARINATED VEGGIES
1 large or 3 small cucumbers
Handful of cherry or grape tomatoes, halved
1/2 large or 1 small onion sliced into thin rings
Italian salad dressing
Salt and fresh ground pepper to taste.
Take cucumbers and peel lengthwise leaving a few small strips of skin. Slice thinly into rounds. Add tomatoes that have been cut in half lengthwise. Add sliced onion, separating rings.
Pour dressing over all and sprinkle with salt and pepper. Marinate shaking or stirring several times for at least 4 hours.
This is better eaten the next day!
