This recipe is from The Vidalia Sweet Onion Lovers cookbook.
ONION RELISH
2 large vidalia sweet onions
2 lemons
1/3 cup sugar
1/4 tsp. freshly grated pepper
Chop onions finely and add juice of 2 lemons, sugar and pepper. Mix well. Cover and refrigerate at least 2 hours. Drain well and it is ready to serve. Serves 12
This recipe is a wonderful accompaniment for any kind of meat. Also it is great for a picnic to use on hot dogs or hamburgers.

There is also a recipe that has onions, tomatoes, green pepper and pickling spices, it can be used immediately or canned. If you would like to have that recipe, let me know here and I will post it.
