Recipe: Orange Basil Dressing and Cranberry Spinach Salad with Warm Honey Dijon Bacon Dressing - Recipes for Marsha (not exactly an Orange-Bacon dressing)

ORANGE BASIL DRESSING
Makes 1 cup

1 cup orange juice
2 teaspoons cornstarch
1/3 cup white wine vinegar
2 teaspoons Dijon-style mustard
2 teaspoons dried basil
2 teaspoons olive oil

In a saucepan, combine the orange juice and cornstarch. Heat to boiling, stirring constantly. Boil for about one minute. Pour into a bowl or jar and refrigerate until cold.

Add the vinegar, mustard, basil, and olive oil. Mix well and serve.


CRANBERRY SPINACH SALAD WITH WARM HONEY DIJON BACON DRESSING
Servings: 4

FOR THE SALAD:
6 oz. package of salad spinach
1/2 cup sweetened dried cranberries
4 thin slices of red onions
FOR THE DRESSING:
4 slices bacon or turkey bacon, cooked crisp and crumbled
1/2 cup plain or orange-flavored honey
1/2 cup lime juice
2 tablespoons Dijon mustard

TO PREPARE THE SALAD:
Wash and clean spinach. Divide evenly among 4 salad plates. Top each with 2 tablespoons sweetened dried cranberries and onion slices.

TO PREPARE THE DRESSING:
Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Pour over salad and toss. Makes 1 cup
