Breakfast and Brunch
IMPOSSIBLE ASPARAGUS PIE

1 (8 oz.) can water chestnuts, drained, coarsely chopped
1 (10 oz.) pkg. frozen cut asparagus, (or on 10 oz. pkg. frozen broccoli spears), thawed and well drained, cut in 1-inch pieces
4 oz chopped pimientos, drained
1/2 cup chopped onion
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups milk
3 eggs
3/4 cup Bisquick baking mix
1/2 tsp garlic salt
1/4 tsp pepper

Heat oven to 400 degrees F. Lightly grease 10-inch pie plate.

Reserve 1/4 cup of the water chestnuts. Layer asparagus (or broccoli), remaining water chestnuts, 2 oz. pimientos, the onion and cheese in prepared pie plate.

Beat remaining ingredients except reserved water chestnuts and remaining pimientos until smooth, 15 seconds in blender on high or 1 minute with electric mixer on high. Pour into plate.

Bake until golden brown and knife inserted in center comes out clean 40 to 45 minutes. Cool 5 minutes.

Garnish with water chestnuts and remaining pimientos.
