LEAN HOMEMADE MEXICAN CHORIZO
"Chorizo is flavorful pork sausage typically pan fried and then eaten on its own or used to kick up the flavor in eggs, beans and meat dishes. By using extra-lean ground pork, this homemade version has all the flavor but less fat than store-bought chorizo."
1 pound extra-lean ground pork
2 tablespoons apple cider vinegar
1 1/2 tablespoons water
1 tablespoon Spice Islands Chili Powder
2 tablespoons Spice Islands Ancho Chile
4 cloves garlic, minced
1 tablespoon oregano, crushed
1 teaspoon crushed Spice Islands Whole Cumin Seed
1 teaspoon sugar
1/2 teaspoon Spice Islands Medium Grind Black Pepper
1 Mazola Sobrecitos Chicken Flavor Bouillon Packets (or 2 teaspoons Mazola Chicken Flavor Bouillon Powder)
1 tablespoon Mazola Corn Oil
TO MAKE THE CHORIZO:
Place all ingredients, except oil, in food processor; pulse until incorporated.
TO COOK THE CHORIZO:
Place 1 tablespoon of oil in saute pan. Add chorizo mixture, cook over medium high breaking up pieces with a wooden spatula. Cook for 15 minutes until pork is browned.
VARIATION:
Traditionally chorizo is piped into pork casing.
Makes 4 servings
