3/4 cup sugar, divided use
1/4 cup margarine, softened
2 eggs
1 teaspoon vanilla
1 teaspoon orange flavoring
1 1/3 cups plus 2 tablespoons Bisquick, divided use
1/2 cup orange soda pop
1 (3 oz.) pkg. cream cheese, softened
1 tablespoon milk
1/4 cup sugar
1/2 cup coconut (plus additional for garnish)
Orange Frosting (recipe follows)
Heat oven to 350 degrees F.
Cream 1/2 cup sugar, the margarine and eggs; add vanilla and orange flavoring. Stir in 1 1/3 cups Bisquick. Then stir in soda pop. Divide batter among 18 paper- lined muffin cups (2 1/2 x1 1/4-inches), filling each 1/2 full.
Mix cream cheese, 2 tablespoons Bisquick, milk, the remaining 1/4 cup sugar and the coconut. Spoon onto each cupcake batter.
Bake until edges are golden brown, about 20 mm. Cool.
Frost with Orange Frosting; sprinkle with coconut.
ORANGE FROSTING
Mix together:
1 cup powdered sugar
2 tablespoons softened margarine
2 tablespoons orange soda pop
1/2 teaspoon orange flavoring
Makes 18 cupcakes
