Hi:
Reading about food today is tempting my tastebuds to make up a batch of
pizza soup.
My mother-in-law told me about this interesting concept, which she made when
her kid were young. It usually gets a funny look from people when you say
it. Pizza is usally associated with something you hold with your hands and
eat
Very easy and tasty - especially nice in the winter.
This is as flexible as your personal tastes for pizza are. You can controll
the amounts and ingredients you want to put into this. You can add hamburg,
bacon, etc. whatever you want to this recipe.
1 or 2 19 oz. cans of stewed or cooked tomatoes
(depends on how much liquid you want in your soup)
1 small can of tomato paste (optional)
1 cup chopped or canned sliced mushrooms
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped pepperoni
1 cup chopped salami
shredded mozza cheese
oregano
garlic powder or cloves
italian spice
salt and pepper
basil
In a large pot, cut of tomatoes so that they are not whole. Add all of the
ingredients - except for mozza cheese - together and slowly simmer for about
1 hour or more on low heat, stirring often. The spices in the pepperoni and
salami will also filter into the soup making it spicer.
When you are ready to serve, scoop into dishes and sprinkle with mozza
cheese which will melt nicely by the time it is ready to eat. Have garlic
bread or fingers and a spinach or ceasar salad would make it complete.
It's really good the day after it's been made.
