Recipe: Passover B.Day Cke

I know the feeling well. My birthday is the end of March. There is the standard Sponge Cake either from scratch or a Kosher for Passover box mix. There are all sorts of mixes available out there.
My mother made a Hazelnut Torte one time. Its layers were split horizontally and filled with whipped cream. She also made Meringue Cakes. You make a batch of sweetened meringue and pipe it through a large tipped pastry bag into swans and curlie-cues and one or two 9" circles with a lip in it. To assemble place one circle on platter, fill with sweeted fruit like strawberries then whipped cream, top with next layer and repeat filling and decorate the top with the swan and curly-cues and whipped cream.

Passover Meringue
2 egg whites(room temp)
1 (heaping) T potato startch/flour
1/2 c sugar
3/4 c grated chocolate or 1/2 c finely ground nuts
dash of salt
Beat egg whites and salt until stiff. Add starch and sugar gradually. Beat well. Fold in chocolate or nuts. Drop by t onto greased cookie sheet.Bake at 275 for 30 min. or until lightly browned and done. Freezes well.

Passover Wheatless Almond Torte
6 eggs, seperated
1 c cold, mashed potatoes
1 c sugar
grated rind and juice of 1 lemon
1-1/2 c grated almonds
Beat yolks until light, about 10 min. Gradually add 1/2 c sugar, nuts, rind, juice and potatoes. Mix well. Beat egg whites until stiff, gradually adding remaining sugar. Fold into yolk mixture. Pour into a well greased 10" pan which has been dusted with potato starch. Bake at 325 for 45 to 60 min May be iced or topped with whipped cream.
