KITCHEN CREW HAMBURGER PIE
"Sure, the kids next door can come for supper - just stretch the hamburger. You make the pie crust. The junior hostess helps with the hamburger-cheese filling."
1 cup plus 2 tbsp baking mix, divided use
1/4 cup milk
1 lb ground beef
1/2 cup chopped onion (or 3 tbsp instant minced onion)
1/2 tsp salt
1/4 tsp pepper
2 tbsp Bisquick baking mix
1 tbsp Worcestershire sauce
2 eggs
1 cup shredded Cheddar cheese (about 4 oz)*
Chili Sauce (optional, for serving)
Heat oven to 375 degrees F.
Stir 1 cup baking mix and the milk to a soft dough. Gently smooth dough into a ball on floured cloth-covered board. Knead 5 times.
Roll dough 2-inches larger than inverted 9-inch pie pan. Ease into pan and fork edge; set aside.
Cook and stir ground beef and onion until meat is brown and onion is tender. Stir in salt,
pepper, the remaining 2 tablespoons baking mix and the Worcestershire sauce. Spoon into the crust.
Beat eggs slightly; mix in cheese. Pour over meat mixture. Cover edge with 2- to 3-inch strip at aluminum foil to prevent excessive browning (remove foil last 5 minutes of baking).
Bake 30 minutes.
Cut into wedges and, if you like, serve with chili sauce.
*1 cup creamed cottage cheese (small curd) may be substituted for the Cheddar cheese.
Makes 6 to 8 servings
