Recipe: Peanut Butter Squares (2)

Here are two recipes:

PEANUT BUTTER SQUARES
makes 48 squares

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup margarine or butter, softened
1/3 cup crunchy peanut butter
1 egg
1 cup all purpose flour
1 cup regular oats
1/2 teaspoon baking soda
1/4 teaspoon salt

Heat oven to 350F. Mix together, sugar, margarine, peanut butter and egg. Stir in flour, oats, baking soda and salt. Spread in greased rectangular pan. 13 x 9 x 2 inches. Bake until golden brown, 17 - 22 minutes. Cool.
Peanut Butter Frosting:

1 1/2 cups powdered sugar
1/4 cup crunchy peanut butter
2 tablespoons milk.

Mix powdered sugar, crunchy peanut butter and 2 tablespoons of milk.Stir in additional milk, a 1/2 teaspoon at a time, until of spreading consistency you prefer.
Cream cheese Frosting.

1 package (8 oz) cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
4 cups powdered sugar

Beat cream cheese, milk and vanilla in 2 1/2 quart bowl on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until smooth and of spreading consistency. To make this into a peanut butter cream cheese frosting, add 2 tablespoons creamy peanut butter.
PEANUT BUTTER SQUARES

1/2 cup margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup peanut butter
1/2 tsp. vanilla
1/2 tsp. soda
1/4 tsp. salt
1 cup flour
1 cup quick oats
6 oz chocolate chips

Cream margarine with the sugars. Blend in egg. Add peanut butter and vanilla. Mix flour, oats, soda and salt and spread in a greased
13 x 9-inch pan. Bake in a 350 degrees oven for 20 to 25 minutes. While still hot, sprinkle with 6 ounces of chocolate chips. Spread over top.

Make icing of 1/4 cup peanut butter, 1/2 cup powdered sugar and 2 tablespoons of milk or cream. Swirl on top of melted chocolate. Cool and cut into squares.
