Recipe: Apple-Custard Pie with a Twist - by Richard Simmons

Hello there Ohio!! I have not made this recipe but it is from a book by Richard Simmons called Sweetie Pie It's a book of just his desserts!! I found this one, not sure if it is what your looking for but here it is!!!

Apple-Custard Pie with a Twist

Crust:
3/4 cup cake flour
1/4 cup all purpose flour
1 teaspoon granulated sugar
Pinch salt
1/4 cup (1/2 stick) of I can't believe its' not butter.. 70% buttermilk-vegetable oil spread. cut into pieces and chilled
2 tablespoons cold water

Filling:
3 Golden Delicious apples
1 tablespoon fresh lemon juice
3 tablespoons all purpose flour
1 large whold egg
1 large egg white
1/2 cup Granulated sugar
1/2 cup low fat milk (1%)
1/4 cup reduced fat sour cream
1/2 teaspoon grated lemon zest
pinch of salt

Streusel:
1/4 cup quick-cooking oats
1/4 cup aqll purpose flour
2 tablespoons light brouwn sugar
1/4 tesaspoons ground cinnamon
pinch of salt
About 1 tablespoon water
1 tablespoon (can't believe it's not butter)
**Richard referres to I can't believe it's not butter as the best spread to bake with in this book..

Make crust: stir flours, sugar, & salt. cut chilled spread in to mixture until resembles fine crumbs. sprinkle with water mix with fork then gater into ball. roll out to 10 1/2in. round place in 9in. pie pan, trim edges, refrigerate while making filling.

Filling: pill and grate apples (makes 3 cups) tass with lemon juice, then 1 tablespoon of flour.
In another bowl mix remaining 2 tablespoons flour, eggs, suger milk, sour crea, lemon zest and salt, then add apple mixture spread in to pie crust. bake @ 375 for 20 mins.

Make streusel: stir oats, flour, brown sugar, cinnamon, and salt. then cut in vegie oil spread until mixture resembles fine crumbs sprinkle with water toss with fork to moisten.. after the 20mins of baking take out pie and sprinkle streusel over filling.

Bake for another 20 - 25 mins. until center if firm and slightly puffed.. serve warm or at room temp. This pie has 205 calories, 7g fat.compared to reg apple pie which has 390 calories, and about 13 g fat
