Recipe(tried): Pecan Crisps

Desserts - Cookies, Brownies, Bars
These wonderful cookies are paper thin, crisp and sugar glazed. They are very easy to make, no rolling, just flatten them with a sugared tumbler.

PECAN CRISPS

1 1/2 cups sifted flour
1 cup sugar
3/4 teaspoon salt
1/2 cup shortening, softened
1 egg, separated
3 Tablespoons milk
1 teaspoon vanilla
1 cup pecans, finely chopped

Heat oven to 375 degrees F.

Sift sifted flour, sugar, and salt into a bowl. Mix in shortening, egg yolk, milk and vanilla thoroughly with a fork. Form into balls the size of a small walnut. Place on ungreased baking sheets.

Press 1/16-inch thick with bottom of greased glass dipped in sugar. Brush with slightly beaten egg white. Sprinkle with pecans.

Bake 8 to 10 minutes. Do not over bake.

Makes about 5 dozen
