NORWEGIAN MACAROONS
1 1/2 cups brown sugar
1 cup butter, softened
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
dash salt
2 cups coconut
Combine sugar, butter, eggs and vanilla. Mix together flour, baking powder and baking soda. Stir into creamed mixture. Stir in coconut.
Roll in balls in hand. Place on lightly greased cookie sheet.
Bake at 350 degrees F until brown (maybe 10-12 minutes?). Cookies should be soft.
