Recipe: Pennsylvania Dutch Cream of Onion Soup
SoupsPENNSYLVANIA DUTCH CREAM OF ONION SOUP
"The Pennsylvania Dutch make a deliciously different onion soup; creamed, extremely rich, a meal in itself."
3 or 4 medium onions, thinly sliced
3 tablespoons butter, melted
2 tablespoons flour
1 cup boiling water
1 quart milk, scalded
1/2 cup evaporated milk, scalded
Salt and pepper
Paprika
Italian grated cheese (optional, for serving)
Simmer onions in butter until a light tan color.
Blend in flour, add water and simmer, stirring constantly, until onions arc tender.
Stir in milk and evaporated milk and simmer gently for 10 minutes, stirring constantly. Season to taste; simmer a moment more, then serve topped by a light sprinkling of cheese.
Makes 4 servings
