Recipe: Lentil Soup (Veg-All, 1992)

LENTIL SOUP

2 tbsp. oil
3/4 cup chopped onion
2 cans (12 oz. each) chicken broth
1/4 pound dried lentils
1 smoked ham hock
1 bay leaf
1/4 tsp. thyme
1/8 tsp. ground pepper
1 clove garlic
1 (16 oz.) can VEG-ALL Mixed Vegetables, with liquid

Heat oil in stock pot; cook onion 1 minute.

Add broth, lentils, smoked ham hock, bay leaf, thyme, pepper and garlic; bring to a boil. Reduce heat and simmer until lentils are tender.

Stir in can of VEG-ALL; heat through and serve.

Makes 4 servings
