TURKEY HASH
2 or 3 cups minced, cooked turkey
3 medium potatoes, boiled and chopped
1 teaspoon chopped parsley
1 small onion, minced
1/2 cup leftover turkey stuffing
1 tablespoon Worcestershire sauce
Gravy or milk
Lightly fried eggs (for serving)
Fresh parsley (for garnish)
Blend together all ingredients, adding just enough gravy or milk to moisten.
Butter a frying pan, place the hash in it, pat down firmly and cook over low heat until there is a brown crust on the bottom. Put a plate over the hash, invert the frying pan. Then slide the uncooked side into the frying pan, to which you have added a little more butter.
When brown, remove to a hot platter, surround with lightly fried eggs and garnish with parsley.
Makes 4 servings
