PENNY'S CHILI
2 large chopped onions
Olive oil
3 lbs lean stew meat, cut into small, bite sized pieces
3 cloves garlic
2 TBSP flour
3 TBSP cumin
3 TBSP chili powder
3 tsp salt
1 tsp cayenne
Abita Amber or other dark brew
1 can chopped tomatoes
1 can tomato paste
1 can consomme
2 cans water
1 can of either black or pinto beans or a can of each
Chop onions, saute in oil.
Add meat and sear, add garlic.
Mix flour with cayenne, cumin, chili powder, salt, and cayenne in bowl and add to sauce pan a little at a time stirring well after each addition; add beer, stir, add tomatoes, tomato paste, consomme, and water. Cover and simmer 1-2 hours, stirring occasionally. Add beans.
Serve with choice of toppings such as minced fresh cilantro, sour cream, shredded cheddar, and chopped onions. Hot corn bread is good with this!
