BANANA CAKE WITH SEA FOAM ICING
6 tablespoons sour cream
1 teaspoon baking soda
2/3 cup butter, softened
1 3/4 cups sugar
2 egg yolks
1 cup mashed bananas
1 cup chopped nuts
2 1/4 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon vanilla
2 egg whites, beaten stiff
Sea Foam Icing (recipe follows)
Dissolve baking soda in 6 tablespoons sour cream; set aside.
Cream butter and sugar together. Beat in egg yolks and add sour cream-soda mixture. Stir in bananas and nuts; set aside.
Sift together flour and baking powder; add to creamed mixture. Add vanilla. Fold in egg whites.
Bake in greased loaf pan for 50-60 minutes at 350 degrees F. Remove from pan and cool on rack.
Frost cooled cake with Sea Foam Icing.
SEA FOAM ICING
1 1/4 cups light brown sugar
5 tablespoons water
2 tablespoons light corn syrup
1 large egg white
1 teaspoon vanilla
Mix all ingredients for the icing except vanilla in top of double boiler. Cook over boiling water, beating constantly until mixture stands in peaks, about 7 minutes. Add vanilla and spread on cake.
