Recipe: Peruvian-Flavored Baked Chicken (using lime juice, honey and chipotle)

PERUVIAN-FLAVORED BAKED CHICKEN

2 cloves garlic, minced
2 tablespoons lower-sodium soy sauce
2 tablespoons lime juice
1 tablespoon minced chipotle in adobo sauce
1 tablespoon honey
1/2 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1 Whole chicken (4 pounds) cut up (back, wings and giblets reserved for another use)

Preheat oven to 375 degrees F. Coat a jelly-roll pan or baking sheet with cooking spray.

Combine garlic, soy sauce, lime juice, chipotle, honey, thyme, paprika and salt in a large bowl; toss with chicken. Place chicken on prepared pan, leaving plenty of space between the pieces.

Bake until an instant-read meat thermometer registers 160 degrees F when placed in the thickest part of the breast and 175 to 180 degrees in the thigh, about 35 minutes.
