PICKLING SPICE MIX -- Makes 4 Cups
+++++++++++++++++++++++++++++++++
1/2 Cup WHOLE ALLSPICE
1 Cup MUSTARD SEEDS
1/2 Cup chopped/dried GINGER ROOT (Omit if you do
not like Ginger flavor)
1/2 Cup BLACK PEPPERCORNS
1/2 Cup (Crushed) CINNAMON STICKS
12 (Crushed) (Dried) BAY LEAVES
1/2 Cup WHOLE CLOVES
6 (Crushed) (Dried) HOT PEPPERS
1/2 Cup DILL SEEDS
1/2 Cup MACE
1/4 Cup CARDAMON SEEDS
3/4 Cup (Ground) CORIANDER
1 Tablespoon (Ground) NUTMEG
Mix all of the spices and put into a DARK GLASS
JAR, with a tight-fitting lid.
Best stored in a cool/dark place.

Hint: 'Pick through' your favorite brand of mixed pickling spices and see what the ingredients are. Omitting items from above that you don't see in your mix.
