QUICK SAUCY CRANBERRY CAKE
FOR THE CAKE:
1 (15.6 oz.) pkg Pillsbury Cranberry Quick Bread Mix
3/4 cup water
2 Tablespoons oil
2 eggs
FOR THE SAUCE:
1 cup fresh cranberries*
3/4 cup firmly packed brown sugar
1 1/4 cups hot water
Heat oven to 350 degrees F. Grease 8-inch square (2-qt.) baking dish.
In large bowl, combine all cake ingredients. Stir 50 to 75 strokes with spoon until mix is moistened.
Sprinkle cranberries in greased baking dish. Spoon and spread batter evenly over cranberries. Sprinkle with brown sugar. Pour water evenly over batter.
Bake at 350 degrees F for 35 to 40 mintues or until cake is golden brown and top springs back when touched lightly in center. Cool at least 30 mintues before serving.
TO SERVE:
Cut into squares. Invert squares onto individual dessert plates. Spoon additional sauce from pan over cake. If desired, top with sweetened whipped cream. Store in refrigerator.
*INGREDIENT SUBSTITUTION:
Frozen cranberries can be used in place of the fresh. Before using them in this recipe, microwave the frozen cranberries in a microwave-safe dish for 45 to 60 seconds to thaw them.
MAKE AHEAD TIP:
This cake can be made a few hours ahead, but it is best served slightly warm. The entire cake may be warmed in the oven, or warm individual pieces in the microwave.
MAKE IT SPECIAL:
Eggnog-flavored whipped cream is the perfect touch for this festive cranberry upside-down cake. Whip a dash of nuitmeg and a little rum extract into the cream before garnishing each serving.
High altitiude (above 3500 feet):
Add 1 Tablespoon flour to dry quick bread mix. Bake as directed above.
Makes 9 servings
